Traditional Catalan and Spanish delicatessen is as extensive and varied as its physical and human geography. Historically, each region and each village have developed, depending on their climate and environment, various techniques to preserve the different pieces of pork that resulted from the slaughter.

Great recipes appeared out of that first necessity, which have been successfully repeated for centuries. These elaborations gave room to real trades and delicacies that have ended up holding a privileged position on the best tables and in the best gastronomy cookbooks.
